Cranberry And White Chocolate Energy Bar

Prep time: 20 mins (+2 hours setting time)

Ingredients
-----------

2 cups rolled oats

2/3 cup desiccated coconut

2 scoops (60g) WPI 90 in French Vanilla

1/3 cup smooth peanut butter

1/2 cup rice malt syrup

1/3 cup dried cranberries

1/4 cup pumpkin seeds

60g white chocolate chips

1/2 tsp salt

Method
------

* Place the oats, desiccated coconut and protein powder into a bowl and mix until combined.
* Next, add the peanut butter and rice malt syrup into a small saucepan and heat on low until smooth and melted, stirring occasionally.
* Add this to the dry ingredients and mix until everything is combined, you may need to use your hands as it’s quite dense.
* Add the cranberries, pumpkin seeds, white chocolate and salt to the bowl and mix until evenly distributed throughout.
* Press into a small, lined baking tray and place into the fridge to set for 2 hours before cutting into bars. Enjoy!

Choc Peanut Quinoa Granol

Makes 4 Cups

Prep time: 10 minutes

Baking time: 20-25 minutes

Macros per 1/3 cup serving

Ingredients
-----------

1 cup rolled oats

1 cup quinoa flakes

1/2 cup quinoa

1/2 cup sunflower seeds

1 cup peanuts, roughly chopped

1 scoop (20g) True Protein Collagen in Rich Chocolate

Pinch salt

2 tbsp cacao powder

1/4 cup olive oil

1/3-1/2 cup maple syrup

2 egg whites

Method
------

* Preheat oven to 180 degrees celcius fan forced.
* Combine all dry ingredients in a large bowl.
* Whisk together the olive oil, maple syrup and egg whites.
* Add the wet mixture into the dry and stir until well combined.
* Transfer to a lined baking tray and bake for 20-25 minutes, taking the tray out after 15 minutes to toss the granola.
* Allow to cool completely before serving.
